Macedonia takes meat seriously. Not in the way that countries with expensive steakhouses take meat seriously, but in the way that cultures who have been cooking over fire for centuries do. As a result, the food is simple, honest, and complete on its own.
One rule before we begin: do not add sauce. No ketchup. No mustard. Because, in Macedonia, the meat arrives exactly as it should. You have been warned.
1. Homemade Sausages — Domashni Kobasici
The king. Homemade sausages are made from pork, seasoned differently in every household. In fact, each version reflects the person making it. Then, they are grilled over charcoal until the outside is crisp and the inside stays juicy.

These are not factory sausages. Instead, they are handmade, rich, and full of flavour. They are served with fries and grilled green peppers, and as a result, the balance between richness and freshness is perfect. Eat everything. Do not add anything extra.
2. Pastrmajlija — The Macedonian Meat Pizza
Pastrmajlija does not look like pizza. However, it is one of the most iconic dishes in Macedonia. It is an oval dough topped with cured meat and egg, then baked in a wood-fired oven. As a result, the edges crisp, the meat cooks, and the flavour deepens.

It comes from Štip, and in fact, locals will proudly remind you of this. Eat it hot. Do not add sides.
3. Selsko Meso — Village Meat
The name says everything. Selsko meso is mixed meat cooked slowly in a clay pot, and because of this, it becomes rich, soft, and deeply flavoured. It arrives in the same pot it was cooked in.

At the same time, it is served with fresh Macedonian salad, and the combination completes the dish. So, eat it slowly — this is not food that rewards rushing.
4. Pork Rib — Two Ways
Pork ribs come in two versions. First, oven-cooked — slow and tender. Second, charcoal — smoky and slightly crispy. Both are correct, and as a result, it depends on the kitchen.

They are served with fries and peppers, and they are meant to be eaten with your hands as much as with cutlery. And, pretending otherwise is a waste of time.
5. Liver — The Bold One
Liver is not for everyone. However, when done right, it is exceptional. It is cooked quickly over high heat, and as a result, the inside stays tender instead of dry.

The Green Peppers are extra
Every dish on this list is better with one thing: grilled green peppers. In fact, they arrive naturally on Macedonian tables. They are dressed with oil, vinegar, and garlic, and as a result, they sharpen every bite.
So, order them. Eat them between bites. Let them do what they are there to do.
